Four raspberry herbal tea bags
1/2 lemon
1/2 blood orange
1 cup pineapple simple syrup
1 cup of chilled water or sparkling soda (flavorless)
I was thirsty and testing ideas in the kitchen. I didn't want sweet tea or lemonade. Think, Lady E ... think!
Hmmmm? What if I make a simple syrup from the core of the pineapple.. instead of just throwing them away in the recycle bin? Okay... let's take on the challenge. Core a fresh pineapple and use the core in the simple syrup mixture. 1 cup water, 1 cup sugar and pineapple core. Bring to a boil and dissolve the sugar. Once, the mixture has boiled and the sugar has dissolved...set aside to cool. Then, boil water to brew the tea bags. Set aside and let cool. Were not having hot tea, right?
While the simple syrup is cooling, slice the lemon (preferably Meyer's Lemons) and the blood oranges. Set the slices in a pitcher. Use the back of a wooden spoon or a muddling device (picture below) and ... well, muddle the fruit to release the juices. . Next take the cooled pineapple simple syrup and pour into the pitcher. Add cooled raspberry tea, water and ice to the top of the pitcher. Stir and serve cold. Ahhhh! Thirst quenched! Not overly sweet. Not super tart. Just right.
