Roasted Shrimp with Black Beans.

One plate wonder that takes 20 - 30 minutes to prepare, cook and serve.






Roasted Shrimp with Black Beans by Lady E Cooks


Ingredients:

1 can black beans
1/4 c chopped white and red onion
1/4 c celery chopped
1/4 c carrots chopped
2 garlic cloves minced finely
2 Tablespoons good olive oil
1 pat of soft butter (unsalted)
2 cups peeled and deveined shrimp
1/2 teaspoon chopped cilantro
1/2 lime (juice)

Pour on the bottom of a saucepan olive oil and butter on low/medium heat. Once, warm add onions, and saute until translucent. Add pinch of salt and pepper. Then, add celery, carrots, garlic and cook until tender. Add drained and rinsed black beans and cook until beans are tender. Add 1/2 fresh lime juice and cilantro to taste.  

In oven place frozen or fresh shrimp on roasting pan and sprinkle with good olive oil, salt and pepper. Toss (with hands) until each shrimp is covered with olive oil. Roast in oven at 400 degrees for EXACTLY 8 minutes. Shrimp will be slightly pink, juicy and moist.

Place black beans on plate and place roasted shrimp on top. Little taste of healthy heaven.
